Cold is the only preservative we use. Deep-freezing halts the activity that spoils food, so flavour and nutrition stay locked in for up to two years — with zero chemicals, additives or artificial anything.
Often it's better. "Fresh" produce can spend days in transit losing nutrients. We capture vegetables and dishes at their peak — within hours — so the version you cook is the version that was perfect.
Straight from the freezer onto a hot pan — no thawing. About 60–90 seconds a side until the layers puff and turn golden. Puttu, idiyappam and idli simply steam for a few minutes.
